Philosophy

Two organic vineyards: one goal. Grapes which not only reflect their soil, climate and environment, but the people who curate them and the season they are nurtured through. Proud staff work, on each individual vineyard site, to build strong, resilient vines grown in vital, healthy soil. With care and consideration given to the whole, knowing that no action occurs in isolation, producing fruit which is greater than the sum of its parts.

Our winemaking

Our winemaking is gentle and intuitive. Respect and care for the fruit with the aim of expressing the site and season with detail and clarity. Vineyard initiated yeast cultures and a deft use of oak so as not to conceal the origin of the fruit – this is standard practice. Aided by a winery, of perfect form and design, for delivering wines gently made by gravity.

Mahana Wines
Mahana wines are only produced when nature compliments our guiding efforts in the vineyards and winery. Idiosyncratic wines revealing an alternate path. Wines which motivate and inspire us.

Woollaston Wines
It is often said that great wine is made in the vineyard - all our grapes are estate-grown, enabling us to control quality from the vineyard to the bottle. Each of our vineyard sites was chosen for its unique character; the flavours that terroir and careful, hands-on viticulture give the fruit are subtly enhanced by the gentle handling of our gravity-fed winery.

We are very excited to announce the arrival of our new chef, Jason Innes, who brings years of award-winning restaurant success and experience to his new post. Innes, who was born in Canada, has lived most of his life on the South Island of New Zealand. His notable experiences include positions as the Executive Chef at leading New Zealand luxury wineries and lodges, such as Amisfield, Millbrook Resort and Country Club, and Grasmere Lodge.  During his tenure at Amisfield, he was the winner of the NZ Cuisine Magazine’s Winery Restaurant of the Year 2006 and 2007, and was a guest chef at The Royal Hong Kong Yacht Club.
Sourcing the best local seafood, meat, fresh vegetables, and herbs are the heart of Innes’ passion for cooking, enabling him to deliver sumptuous, generous flavours with an abundance of skillful preparation. Under his direction, plans are underway for the herb and vegetable garden, which exemplify his farm-to-table concept for the Mahana Cellar Door. His goal is to enhance the five-star rated wine with exceptional food, establishing Mahana’s Cellar Door as a renowned “destination” in New Zealand. “If you haven’t been here, then you need to come,” exclaimed Innes, “You don’t want to miss this wine and culinary experience.”
