WOOLLASTON MOUTERE CLAY PINOT NOIR 2005
Dark ruby garnet in colour. The nose shows black cherry, plum and liquorice with savoury oak notes providing complexity. On the palate concentrated dark berry fruit provide a fruit core that is supported by firm fine grained tannins moderated by a silky texture at the finish. Technical InformationAfter harvest the grapes were chilled overnight and then hand sorted before being destemmed into fermenters. A 3 day 'cold soak' was carried out after which the fermentation was allowed to begin. During fermentation the cap was plunged gently up to 3 times a day. At the completion of ferment the wine was drained by gravity to French barrels for cellaring for 9 months.
