WOOLLASTON ROSE 2011
A watermelon blush, with a fresh lifted nose of tree ripened cherries. A fresh and bright entrance on the palate with an array of cherries and cranberries leading to a smooth and velvety finish. Technical InformationPinot Noir grapes were hand harvested on April 15th. The fruit was gently de-stemmed and held on skins briefly to extract colour and aroma before being pressed. The juice was inoculated and fermented at cool temperatures to preserve the fresh berry-fruit characters. The wine was bottled using gravity. Pinot Noir blocks targeted for the production of the Rose were carefully managed with judious shoot thinning and some leaf plucking to ensure a balanced open canopy. Three distinct clones were selected, grown in Moutere clay bound gravels on north facing slopes, with a planting density of either 2840 or 3175 vine per hectare. pH 3.49 Food & WineA perfect match to smoked salmon, ripe brie and summer salads.
