WOOLLASTON NELSON PINOT NOIR 2010
A warm spicy nose of lush red berry fruits with savoury complexity. An entrance of plums on the palate leads to savoury notes and an underlying hint of spice with fine-grained tannins giving structure and balance.
Hand harvested grapes were sorted before gentle destemming directly into the fermenter. A 3-4 day cold soak preceded fermentation with wild yeasts. Periodic plunging of the cap was done up to three times per day at peak ferment. The wine was held on skins post ferment maceration until desired tannic structure had been achieved. This wine was bottled using garvity.
